I found the issue (via a call to Lulzbot). For others that encounter this when changing a head and or updating Cura.
Be sure you go to "Machine" --> "Install default firmware", then restart the printer, then open Cura.

Help! Cura CONTROL Button gone!

I just bought the new Flextruder head for my Mini. Instructions said to update to the latest version of Cura (21.03). Did that. Now when I load a model, instead of getting the "CONTROL" button that allows me to print, all I get is a "SAVE GCODE" button. I can't do anything with it now. What happened...

Thanks, I'll try adjusting the flow rate. I think the Taz is a better printer though. I probably should have got that one. The sample octopus printed pretty well for me. But I'm not sure what you mean by using the g-code. The manual is really poor with this thing. It doesn't even tell you how to do ...

I understand what e-step calibration is, and how to measure it and all that, however, its no t clear how I make the adjustment to my Lulzbot mini. It has no LCD screen. It is something I do in Cura? I added it as a new machine, just used standard settings and got everything correct. Still looks pretty jagged but it is working from my Mac which makes me pretty happy. That TOTALLY worked! :D So major problem ONE solved, thanks for posting that fix. I hope others can benefit by that too.
