It looks like that is a thermistor wire that came loose. Under the profile drop down menu, do you have the option to Discard Current Changes? If so, try selecting that to see if it brings back your material profiles. Also, when you cleared the cache, did you make sure to get rid of all of the older versions of Cura?

the z-offset is mainly used for printers with the auto bed leveling which the stock Taz 5 does not have. The Taz 5 z-offset is based off the thumbscrew on the left side of the bed.

Can you please try moving the x and y axis in their full range of motion, while issuing the M119 command each time the axis is all the way in one direction or the other? Are you able to control the Z-axis properly when giving commands through Cura or the LCD screen? Are you using a heated enclosure? Also, are there any drafts in the room? ABS will start to warp and split if it is cooled to quickly and having an enclosure helps prevent that from happening. It looks like the shift is along the x-axis, so definitely check to see if that belt is tight. It should make a slight twang sound if you pluck it like a guitar string. The most common reason for a layer shift like that can be due to a loose belt. Depending upon how the model was set up on the bed will help determine which belt might need to be tightened. If it was front to back, that would be your y-axis belt, if it was left to right, that would be your x-axis belt.
