I didn't have to adjust my z-offset when upgrading to the aerostruder, however if you are having problems with the first layer, here is a picture showing what a good first layer line should look like.

One way that we use over here when we get a bad clog on an Aerostruder, is to disable the heat sink fan by placing an index card or something similar over the fan to prevent the airflow into the heat sink. Once you have the heat sink fan disabled you will then heat the hotend up to 220C for PLA or 2...

Try reconditioning your PEI sheet, and it should help with adhesion problems. The best way is to get a spray bottle and mix up 1 part alcohol and 9 parts water. Get some 1500 - 2000 grit sandpaper. It sounds like you might have blown a fuse on the RAMBo board. Try swapping out the F2 and F3 fuses and see if the screen comes back to life, just make sure not to run it with the fuses swapped. Has anything metallic or conductive been used to clean your nozzle? The z-min being triggered usually is a sign that the RAMBo board has been shocked, and the most common reason for this, is when someone uses something metallic to clean the nozzle and in turn shocked the board.

You can adjust the layer height under the Custom slider in Cura LE, once you slide the slider from Recommended to Custom, you will see quite a few tabs appear.
