Nozzle height is critical to good prints. The Z-endstop is the primary adjustment. The Z-offset helps with fine tuning, but really optional if you’ve nailed the endstop. FWIW, a quarter turn of the endstop knob is about .1mm.

More important is to ensure the bed is level. Next is to ensure the x-gantry is level.

The real issue is without a way to quantify each of these settings, its like re-inventing the wheel / guessing each time. Dial gauges (bed levelling), feelers (nozzle height) and calipers (gantry height) help to quantify adjustment for reproducible and accurate adjustments.
