Am I correct in assuming that Lulzbot Minis shipping now come standard with the v2.1 toolhead?

If you buy a brand new printer from Lulzbot, yes. Hard to say if you buy it second hand depending how long it’s been sitting on the shelves. However, if you got an older toolhead it’s easy to swap out, or, print your own pieces to upgrade the old toolhead to the new one easily.
