Great idea in principle, in practice it is much harder to do. All Marlin adjustment screens look exactly the same and place the text in the very middle. The Z-offset screen overlays a graphic on top of that standard screen, but cannot change the placement of the underlying text. Neither one of the alternatives would be possible because they move the location of the text.

For what it is worth, a similar suggestion has already been made and the orientation of the arrows has already been changed in response to that suggestion. If you try the latest Marlin 2.0.x branch, you will see that it is clearer than the"confusing" screen shots you posted.
