I would definitely check the thermistor, from the heater block, through the crimps, the connectors to the wiring harness and beyond. For a Max temp error to occur it’s going to be related to the thermistor.
With the printer powered off and disconnected from the computer disconnect the hot end from the wiring harness on the extruder. Check the resistance of the two orange wires. If the thermistor is reading correctly, you should be able to detect a resistance of approximately 100K at room temperature (±10k or so). Make sure that you can duplicate the reading. You will also want to make sure that the thermistor wiring is still insulated and not touching the side of the heater block or hot end. The thermistor is replaceable and requires the use of a crimped connection as the hot end can potentially get hot enough to cause soldered connections to fail.
